  • Chop the baker’s chocolate.
  • In a double boiler over medium-high heat, combine the coconut cream or heavy cream and strawberry jam.
  • If you have a thermometer, make sure this does not go over 110° And make sure yur water is just at a simmer and not boiling.
  • Once the mixture is warm and well combined, add the chopped chocolate. Stir until the chocolate is melted and the mixture is smooth.
  • Add vanilla extract, stir, then cover and chill the mixture in the fridge for about 4 hours until firm.
  • Blend freeze-dried strawberries into a powder.
  • Roll the chilled chocolate mixture into small balls and Roll the truffles in the strawberry powder until completely coated.
  • Place on parchment paper and return to the fridge.
  • Serve cold or let set out about 15 minutes for a softer truffle.
