Snickerdoodle French Toast: A Cozy Twist on a Classic

There’s something about French toast that feels like the definition of comfort food. Thick slices of bread dipped in custard, fried golden in butter, and drizzled with syrup — it’s simple, cozy, and nostalgic all at once. But when you take that classic and give it a snickerdoodle twist, it becomes downright irresistible.

This version is infused with my homemade Snickerdoodle Spice Mix, which blends cinnamon, cardamom, and sugar for that warm, spiced sweetness everyone loves. Add in a splash of vanilla and rich heavy cream for the custard, and you’ve got a breakfast (or brunch!) that tastes like a cross between cinnamon toast and cookies.

Why Snickerdoodle Spice Works So Well

Snickerdoodles have always been about balance — the sweet warmth of cinnamon with the aromatic lift of cardamom. Bringing those flavors into French toast makes perfect sense. Instead of just cinnamon sugar sprinkled on top, the spice mix goes right into the custard, flavoring every bite of bread from the inside out.

Choosing the Right Bread

For the best French toast, go with bread that’s a little sturdy and ideally a day old. Brioche, challah, or sourdough all work beautifully. Their structure soaks up the custard without falling apart, and they fry up with a lovely crisp edge.

If all you’ve got is sandwich bread, don’t worry — it will still taste delicious. Just be gentle when soaking so it doesn’t get too soft.

Ingredients
  

  • 6-8 slices bread (thick-cut works best)
  • large eggs (about 1 egg per 2 slices bread)
  • 3/4-1 cup heavy cream (for a rich custard; milk can be substituted for a lighter version)  about 1/4 cup per egg
  • 2 tbsp Snickerdoodle Spice Mix
  • 2 tsp vanilla extract
  • Butter, for cooking

  • Heat skillet: Place a skillet or griddle over medium heat and add a little butter so it’s ready before dipping the bread.
    Make custard: In a shallow dish, whisk together eggs, heavy cream (or milk), vanilla, and Snickerdoodle Spice Mix until smooth.
    Dip bread: Quickly dip each slice of bread into the custard, about 20–30 seconds per side, just until coated but not soggy.
    Cook: Transfer dipped slices directly to the hot skillet. Cook until golden brown on each side, about 2–3 minutes per side.
    Serve: Sprinkle with extra Snickerdoodle Spice Mix and serve with maple syrup.

Notes

  • Standard custard ratio: 1 egg + ¼ cup cream (or milk) = ~2 slices bread.
    Heavy cream makes the custard rich and decadent; milk is a lighter option.
    Slightly stale bread works best since it soaks up custard without getting soggy.
