A Side Dish That Feels Like Magic

Cauliflower and fennel are one of my favorite pairings, and most days I’m happy to just roast them together and call it done. But sometimes, I feel in the mood for a little magic — and this dish is exactly that.

It’s earthy, creamy, and full of roasted sweetness, with that faint licorice note from the fennel that keeps it interesting. The oven does nearly all the work, leaving you with a side that tastes far more elegant than the effort it takes.

And here’s the secret bonus: add a little warm stock or cream, and this purée instantly becomes a silky soup. I love a dish that can do both.

Roasted Cauliflower and Fennel Mash

Ingredients
  

  • 1 head cauliflower
  • 1 bulb fennel bulb
  • 1 shallot cut into quarters
  • 3 cloves garlic
  • 2 tbsp oil I prefer avocado oil.
  • 2 tbsp butter
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp heavy cream
  • 1 tsp kosher salt
  • 1/2 tsp cracked pepper I prefer a mixed pepper blend.

Instructions
 

  • Preheat oven to 425°F (220°C).
    Cut cauliflower into florets and place in a heavy roasting pan (a cast-iron casserole works beautifully).
    Add the chopped fennel, garlic cloves, and shallot.
    Toss everything with oil, salt, and pepper until lightly coated.
    Roast for 30 minutes, tossing halfway through, until golden and fragrant.
    Transfer to a mixing bowl and purée with butter, Parmesan, and cream until smooth.
    For a chunkier texture, mash by hand.
    For ultra-smooth, use an immersion blender or food processor.
    Taste and adjust seasoning.
    Serve warm, topped with a pat of butter and a sprinkle of fennel fronds.

  • Soup variation: Thin with warm broth or extra cream for a velvety roasted vegetable soup.
    Make-ahead: Can be roasted and blended ahead, then reheated gently with a splash of cream.
    Topping ideas: A drizzle of herb oil, crispy shallots, or roasted nuts add texture and flair.
