Potatoes Au Gratin

This easy Au Gratin potato dish is one of my favorites and a go-to for dinner parties.

They are easy to assemble, all in one skillet, and have minimal clean-up.

The two biggest tips to ensure a successful dish are: first, you must use heavy cream, or it will not thicken, and you should grate your own cheese as the pre-grated will get gritty from the anti-caking agent.

Ingredients
  

  • 3 pounds Potatoes, Idaho, Yukon gold or sweet. sliced thinly (1/8 inch)
  • 3 cups heavy cream
  • 1/8 tsp nut meg
  • kosher salt and fresh ground pepper
  • 2 cups freshly grated cheese gouda, gruyere, swiss or cheddar
  • 1 cup freshly shredded parmesan cheese

Instructions
 

  • Heat oven to 400°
  • Butter a 10-inch cast iron skillet or casserole dish.
  • Mix both cheeses together.
  • Add the nutmeg to the cream and whisk.
  • Layer one layer of potatoes in the bottom of the skillet, sprinkle with salt and ground pepper, top with cheese, and pour a little cream over.
  • Continue layer after layer until you reach the top.
  • Brush a piece of foil with butter, place it butter-side down onto the potatoes, and secure around the edges.
  • Bake for 30 minutes.
  • Remove the foil, and bake anouther 30 minutes.
  • Let rest for 10 minutes and enjoy!
