- 3 pounds Potatoes, Idaho, Yukon gold or sweet. sliced thinly (1/8 inch)
- 3 cups heavy cream
- 1/8 tsp nut meg
- kosher salt and fresh ground pepper
- 2 cups freshly grated cheese gouda, gruyere, swiss or cheddar
- 1 cup freshly shredded parmesan cheese
Heat oven to 400°
Butter a 10-inch cast iron skillet or casserole dish.
Mix both cheeses together.
Add the nutmeg to the cream and whisk.
Layer one layer of potatoes in the bottom of the skillet, sprinkle with salt and ground pepper, top with cheese, and pour a little cream over.
Continue layer after layer until you reach the top.
Brush a piece of foil with butter, place it butter-side down onto the potatoes, and secure around the edges.
Bake for 30 minutes.
Remove the foil, and bake anouther 30 minutes.
Let rest for 10 minutes and enjoy!
