  • 1 10 inch cast iron skillet
  • 1 Or a 9 by 9 oven safe casserole dish

  • Preheat oven to 400°
  • In your cast iron pan or casserole dish, add the rice.
  • Measure your reserved pineapple water and add water to messure 12 onces.
  • Pour this over your rice with 1/2 tsp kosher salt.
  • Cut butter into slices and place on top.
  • Cover with foil and bake for 30 minutes.
  • while your rice is cooking, dice your pineapple.
  • After 30 minutes, uncover and add your diced pineapple, and any liquid they have provided. Stir into rice.
  • Place back in the over uncovered for 30 minutes.
  • Fluff with a fork and serve
