Preheat oven to 400°
In your cast iron pan or casserole dish, add the rice.
Measure your resurved pineapple water and add water to messure 12 onces.
Pour this over your rice with 1/2 tsp kosher salt.
Cut butter into slices and place on top.
Cover with foil and bake for 30 minutes.
while your rice is cooking, dice your pineapple.
After 30 minutes, uncover and add your diced pineapple, and any liquid they have provided. Stir into rice.
Place back in the over uncovered for 30 minutes.
Fluff with a fork and serve
