- 1 10 inch cast iron skillet
- 1 Or a 9 by 9 oven safe casserole dish
Ingredients
- 1 pint Canned pineapple, strained and save the liquid Or one 20 once can store bought pineapple.
- 3/4 cup Long grain rice
- 1 stick Salted butter
- 1/2 tsp Kosher salt
Instructions
- Preheat oven to 400°
- In your cast iron pan or casserole dish, add the rice.
- Measure your resurved pineapple water and add water to messure 12 onces.
- Pour this over your rice with 1/2 tsp kosher salt.
- Cut butter into slices and place on top.
- Cover with foil and bake for 30 minutes.
- while your rice is cooking, dice your pineapple.
- After 30 minutes, uncover and add your diced pineapple, and any liquid they have provided. Stir into rice.
- Place back in the over uncovered for 30 minutes.
- Fluff with a fork and serve
