Miss Helens Blackberry Cobbler

Summertime screams blackberry cobbler to me, and this is my favorite recipe. 

 

This recipe was given to me by my Beautiful friend Helen Stewart, and it is in her memory that I share it with you.

BLACKBERRY COBBLER

Soft jam like blackberries topped with a crunchy delicious top and cool vanilla ice cream.

Ingredients
  

  • 4 cups fresh blackberries
  • 1 cup flour
  • 1 cup sugar
  • 1 stick butter, melted
  • 1 egg

Instructions
 

  • Preheat oven to 375℉
  • I use a 10-inch cast iron skillet, but any oven-safe dish can be used.
  • Butter your skillet and add the blackberries.
  • In a bowl, whisk together the flour and sugar, and a big pinch of kosher salt.
  • Whisk the egg and gradually add it to the flour-sugar mixture.
  • Stir together egg, sugar, and flour in a medium bowl until the mixture resembles coarse meal.
  • Sprinkle this crumb mixture all over your blackberries.
  • Pour the melted butter over the top, and bake for 30 minutes or until the desired brownness.
  • Now let it sit for a couple of minutes, and then serve with vanilla ice cream!
