Ingredients
  

  • 1 ripe mango, peeled and chopped
  • small piece fresh ginger, peeled and diced (about 1–2 teaspoons)
  • Zest of 1 whole lime
  • 1 whole lime, peeled and segmented
  • 1-2 tbsp raw unfiltered honey
  • 1/8 tsp Redmond Real Salt
  • 1/2 cup coconut water

Instructions
 

  • Add the mango, ginger, lime zest, peeled lime segments, honey, salt, and coconut water to a blender.
    Blend until completely smooth, about 30–60 seconds.
    Strain through a fine-mesh strainer, pressing with a spoon to extract as much liquid as possible.
    Taste and adjust sweetness if desired.
    Transfer to a jar and refrigerate until ready to use.

Notes

  • A very ripe mango will provide the sweetest flavor and may require less honey.
    Start with 1 tablespoon honey and add more to taste.
    Store covered in the refrigerator and use within 3–4 days.
    For the smoothest texture, strain through a fine-mesh sieve before refrigerating.

  • Mix 1/4 cup concentrate with 8–12 ounces club soda, sparkling water, or cold water.
