- 1 ripe mango, peeled and chopped
- small piece fresh ginger, peeled and diced (about 1–2 teaspoons)
- Zest of 1 whole lime
- 1 whole lime, peeled and segmented
- 1-2 tbsp raw unfiltered honey
- 1/8 tsp Redmond Real Salt
- 1/2 cup coconut water
Add the mango, ginger, lime zest, peeled lime segments, honey, salt, and coconut water to a blender.Blend until completely smooth, about 30–60 seconds.Strain through a fine-mesh strainer, pressing with a spoon to extract as much liquid as possible.Taste and adjust sweetness if desired.Transfer to a jar and refrigerate until ready to use.
Notes
A very ripe mango will provide the sweetest flavor and may require less honey.Start with 1 tablespoon honey and add more to taste.Store covered in the refrigerator and use within 3–4 days. For the smoothest texture, strain through a fine-mesh sieve before refrigerating.
