- fish and seafood
- pasta
- rice
- bread for grilled cheese
- bread for toast rounds
- potatoes, mashed, baked, or roasted
- scrambled eggs
- sauteed vegetables
- on steamed vegetables
Herb Compound Butter
butter enhanced with herbs
Ingredients
- 2 sticks unsalted butter at room temperature
- 1 tbsp parsley chopped
- 1 tbsp oregano chopped
- 1 tbsp thyme chopped
- 1 tbsp rosemary chopped
- 1 tbsp basil chopped
- 1 tbsp finely diced shallots
- 2 cloves garlic finely minced
- 1 tbsp spicy dijon mustard
- hot sauce to taste
- few drops of worstershire
- 2 good pinches of kosher salt
- a few grinds of fresh pepper
Instructions
- mix all ingredients well
- using parchment paper or plastic wrap roll the butter into a log about 6 inches long and 1 inch around
- twist the ends and place in the fridge in an airtight bag
