One Blend, So Many Ways to Use It

A good homemade seasoning blend is one of those simple things that can make everyday cooking a little easier. This Greek Herb Blend has become one I can reach for when I want plenty of herbs and flavor without pulling seven different jars out of the cabinet every time I cook.

The combination of oregano and dill gives it that unmistakable Greek-inspired flavor, while thyme and parsley round everything out. Garlic, onion, and white pepper bring the savory backbone that makes the blend useful well beyond one particular dish.

 

Why I Leave the Salt Out

I prefer to keep salt out of homemade seasoning blends whenever possible. Different foods need different amounts of salt, and the other ingredients in a recipe can make a big difference too.

A dish made with feta and olives, for example, may need much less added salt than roasted potatoes or a piece of chicken. Keeping the seasoning blend salt-free lets you add as much of the herbs and spices as you want without accidentally oversalting the finished dish.

It also means you can choose the type of salt you prefer and season each recipe to taste.

A Quick Turn in the Spice Grinder

You don’t have to grind this seasoning blend, but I like to give mine just a few quick turns in a spice grinder. This breaks down some of the larger dried herbs and helps everything distribute more evenly throughout the blend.

The goal isn’t to turn it into a powder. You still want to see those beautiful little flecks of herbs.

If you don’t have a spice grinder, don’t worry. Simply combine everything in a jar, put on the lid, and give it a good shake.

Ways to Use Greek Herb Blend

This is the kind of seasoning that earns its place in the spice cabinet because there are so many ways to use it. Sprinkle it over chicken, pork, lamb, shrimp, or fish before cooking. Toss it with potatoes or vegetables before roasting or grilling, or use it to add flavor to rice and orzo.

You can also stir it into marinades or combine it with extra virgin olive oil and red wine vinegar as the starting point for a homemade Greek vinaigrette.

And, of course, it is the seasoning blend I use in my Greek Chicken & Orzo Skillet.

  • Add all ingredients to a spice grinder and pulse just a few times, until the larger herbs are slightly broken down and the mixture is evenly combined. Do not grind into a fine powder. If you do not have a spice grinder, add the ingredients directly to an airtight jar, seal, and shake well to combine.
    Transfer to an airtight jar.

    This seasoning blend does not contain salt, allowing you to control the amount of salt in each individual recipe.
    Use to season chicken, pork, lamb, shrimp, fish, potatoes, roasted or grilled vegetables, rice, and orzo. It can also be added to marinades or combined with extra virgin olive oil and red wine vinegar for a Greek-style vinaigrette.
