When I first made this recipe a couple of years ago, it was one of those “let’s see what happens” moments in the galley. I wanted something creamy and sweet for dipping fruit — but without refined sugar, dairy, or anything artificial. What I ended up with was this rich, caramel-like dip that tastes indulgent yet couldn’t be simpler.

It starts with dates, nature’s candy. But beyond their sweetness, dates are actually packed with nutrition. They’re rich in polyphenols, a type of antioxidant that helps reduce inflammation, support digestion, and even play a role in blood sugar management. They have no cholesterol, but they do have magnesium and potassium — two minerals that support heart health and energy levels.

Then comes the coconut milk. I’m careful about which one I buy, because not all are created equal. The only ingredients should be coconut and water — no gums, stabilizers, or mystery thickeners. Always read the label. Coconut milk is loaded with vitamins A and E, a little iron, and plenty of potassium. It’s known to support healthy cholesterol levels and has natural antibacterial and antiviral properties, which is a bonus during cold and flu season.

Once the dates have soaked and softened, they blend beautifully with that thick layer of coconut cream from the top of the can. Add a touch of vanilla and a pinch of sea salt, and you get this smooth, caramel-colored dip that’s good enough to eat by the spoonful.

You can serve it cold with sliced apples, pears, or strawberries. Or warm it up slightly and turn it into a fondue-style dip — it’s amazing with pineapple or bananas. It even doubles as a naturally sweet coffee creamer if you’re feeling creative.

Date & Coconut Fruit Dip

Ingredients
  

  • 1 cup pitted dates
  • Hot water (for soaking)
  • 1/2-3/4 cup coconut milk (mostly the thick cream from the top of the can)
  • 1/2 tsp vanilla extract
  • Pinch of sea salt

Instructions
 

  • Soak the Dates – Add pitted dates to a bowl and cover with hot water. Let them soak about 5–10 minutes to soften.
    Blend the Base – Drain most of the water, leaving a tablespoon or two. Add the dates to a blender or food processor and give them a few whirls until mostly smooth.
    Add Coconut Milk – Pour in about ½ cup of coconut milk, focusing on the thick layer of fat from the top of the can.
    Season & Blend – Add vanilla and a pinch of salt, then continue blending until smooth and creamy. If it’s too thick, add a splash of the soaking water to loosen.
    Serve & Enjoy – Use as a dip for fruit, swirl into coffee, or warm it gently for a fondue-style treat.

Storage

  • Store in a sealed jar in the refrigerator up to 5 days. Stir before serving.
