Date & Coconut Fruit Dip

This smooth, creamy dip tastes like caramel — only it’s made from real food. Dried dates bring natural sweetness and antioxidants, while coconut milk adds healthy fats and a silky texture. It’s delicious with fresh fruit, spooned into coffee, or even warmed as a fondue-style dip.

Ingredients
  

  • 1 cup pitted dates
  • Hot water (for soaking)
  • 1/2-3/4 cup coconut milk (mostly the thick cream from the top of the can)
  • 1/2 tsp vanilla extract
  • Pinch of sea salt

Instructions
 

  • Soak the Dates – Add pitted dates to a bowl and cover with hot water. Let them soak about 5–10 minutes to soften.
    Blend the Base – Drain most of the water, leaving a tablespoon or two. Add the dates to a blender or food processor and give them a few whirls until mostly smooth.
    Add Coconut Milk – Pour in about ½ cup of coconut milk, focusing on the thick layer of fat from the top of the can.
    Season & Blend – Add vanilla and a pinch of salt, then continue blending until smooth and creamy. If it’s too thick, add a splash of the soaking water to loosen.
    Serve & Enjoy – Use as a dip for fruit, swirl into coffee, or warm it gently for a fondue-style treat.

Storage

  • Store in a sealed jar in the refrigerator up to 5 days. Stir before serving.
