Blueberry Lemon Bars
sweet and tart lemon bars take on blueberries

Ingredients
blueberry sauce
- 1 1/2 cup fresh blueberries
- 1/2 cup sugar
- 1 cup water
Crust
- 2 sticks butter
- 1/2 cup sugar
- 1/4 tsp salt
- 2 cups flour
Filling
- 2 cups sugar
- 6 eggs
- 1/2 cup fresh lemon juice
- 6 Tbsp flour
- cooled blueberry sauce
Instructions
Blueberry sauce
- In a saucepan over medium-high heat, add the blueberries, sugar, and water
- Bring to a boil
- Reduce the heat to low and simmer for 5 minutes
- let sit off the heat and make the crust
Crust
- Heat oven to 350
- Line a 10 by 15-inch pan with parchment paper to cover the bottom and sides
- Add the butter, sugar, salt, and flour to a bowl, and with a pastry cutter mix until the butter is pea-sized
- Press into the prepared pan making sure to press into the sides to make an even crust
- Bake for 20 minutes
- Remove from the oven and pierce the crust all over without going all the way thru the crust
- Set aside
Blueberry sauce
- Working in batches add the blueberry sauce to your food processor
- Process for a minute on medium and strain thru a fine mesh strainer, pressing to collect all the sauce
Filling
- Add the eggs and sugar to a bowl and whisk until combined and the mixture gets light and fluffy
- Add the flour and mix to combine
- Add the lemon juice and blueberry sauce and mix to combine
- Pour over the crust and bake for 30 minutes ur until the filling is set
- Let sit on a wire rack until cool
- For best results cool in the fridge overnight
- Cut into squares and dust with powdered sugar to serve
