Blueberry Lemon Bars

sweet and tart lemon bars take on blueberries

Ingredients
  

blueberry sauce

  • 1 1/2 cup fresh blueberries
  • 1/2 cup sugar
  • 1 cup water

Crust

  • 2 sticks butter
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 2 cups flour

Filling

  • 2 cups sugar
  • 6 eggs
  • 1/2 cup fresh lemon juice
  • 6 Tbsp flour
  • cooled blueberry sauce

Instructions
 

Blueberry sauce

  • In a saucepan over medium-high heat, add the blueberries, sugar, and water
  • Bring to a boil
  • Reduce the heat to low and simmer for 5 minutes
  • let sit off the heat and make the crust

Crust

  • Heat oven to 350
  • Line a 10 by 15-inch pan with parchment paper to cover the bottom and sides
  • Add the butter, sugar, salt, and flour to a bowl, and with a pastry cutter mix until the butter is pea-sized
  • Press into the prepared pan making sure to press into the sides to make an even crust
  • Bake for 20 minutes
  • Remove from the oven and pierce the crust all over without going all the way thru the crust
  • Set aside

Blueberry sauce

  • Working in batches add the blueberry sauce to your food processor
  • Process for a minute on medium and strain thru a fine mesh strainer, pressing to collect all the sauce

Filling

  • Add the eggs and sugar to a bowl and whisk until combined and the mixture gets light and fluffy
  • Add the flour and mix to combine
  • Add the lemon juice and blueberry sauce and mix to combine
  • Pour over the crust and bake for 30 minutes ur until the filling is set
  • Let sit on a wire rack until cool
  • For best results cool in the fridge overnight
  • Cut into squares and dust with powdered sugar to serve
