Blueberry Lemon Bars
sweet and tart lemon bars take on blueberries

blueberry sauce
- 1 1/2 cup fresh blueberries
- 1/2 cup sugar
- 1 cup water
Crust
- 2 sticks butter
- 1/2 cup sugar
- 1/4 tsp salt
- 2 cups flour
Filling
- 2 cups sugar
- 6 eggs
- 1/2 cup fresh lemon juice
- 6 Tbsp flour
- cooled blueberry sauce
Blueberry sauce
In a saucepan over medium-high heat, add the blueberries, sugar, and water
Bring to a boil
Reduce the heat to low and simmer for 5 minutes
let sit off the heat and make the crust
Crust
Heat oven to 350
Line a 10 by 15-inch pan with parchment paper to cover the bottom and sides
Add the butter, sugar, salt, and flour to a bowl, and with a pastry cutter mix until the butter is pea-sized
Press into the prepared pan making sure to press into the sides to make an even crust
Bake for 20 minutes
Remove from the oven and pierce the crust all over without going all the way thru the crust
Set aside
Blueberry sauce
Working in batches add the blueberry sauce to your food processor
Process for a minute on medium and strain thru a fine mesh strainer, pressing to collect all the sauce
Filling
Add the eggs and sugar to a bowl and whisk until combined and the mixture gets light and fluffy
Add the flour and mix to combine
Add the lemon juice and blueberry sauce and mix to combine
Pour over the crust and bake for 30 minutes ur until the filling is set
Let sit on a wire rack until cool
For best results cool in the fridge overnight
Cut into squares and dust with powdered sugar to serve
