Blue Cheese Stuffed Pears

  • 10 inch cast iron skillet Or any oven-safe dish

Ingredients
  

  • 3 Pears
  • 3 oz Blue cheese gorgonzola or stilton
  • 1/4 cup Dried Cranberries
  • 1/4 cup Walnuts
  • 3/4 cup Apple Cider divided Or white wine or red wine
  • 3 tbsp Fig Jam Any jam, blackberry, raspberry, mango chutney
  • 3 tbsp Maple Syrup
  • 1/4 tsp Kosher salt
  • 1/8 tsp Freshly ground pepper

Instructions
 

  • Turn oven to 400 degrees and place your cast iron skillet into heat up with the oven.
  • Mix all the blue cheese, walnuts, dried cranberries, maple syrup, jam, salt and pepper, and 1/4 cup of the apple cider.
  • Cut pears in halves and scoop the seeds with a teaspoon or a melon baller Place the halves open-faced in your cast iron skillet.
  • Stuff the pears evenly on the pears and pour the remaining 1/2 cup of apple cider around them.
  • Bake 25 to 30 minutes.
  • These are great as is drizzled with the glaze from the bottom of the pan. Or with ice cream again the glaze drizzled over.
  • They can also be served as a started salad.
  • Strain off the glaze and whisk in 1 Tbsp lemon juice and 3 tbsp olive oil and toss with mixed greens and serve the pears over
