Blue Cheese Stuffed Pears
Baked pears with blue cheese, walnuts, and dried cranberries are a delicious and elegant dessert that brings together a perfect balance of flavors. - 3 Pears
- 3 oz Blue cheese gorgonzola or stilton
- 1/4 cup Dried Cranberries
- 1/4 cup Walnuts
- 3/4 cup Apple Cider divided Or white wine or red wine
- 3 tbsp Fig Jam Any jam, blackberry, raspberry, mango chutney
- 3 tbsp Maple Syrup
- 1/4 tsp Kosher salt
- 1/8 tsp Freshly ground pepper
Turn oven to 400 degrees and place your cast iron skillet into heat up with the oven.
Mix all the blue cheese, walnuts, dried cranberries, maple syrup, jam, salt and pepper, and 1/4 cup of the apple cider.
Cut pears in halves and scoop the seeds with a teaspoon or a melon baller Place the halves open-faced in your cast iron skillet. Stuff the pears evenly on the pears and pour the remaining 1/2 cup of apple cider around them.
Bake 25 to 30 minutes.
These are great as is drizzled with the glaze from the bottom of the pan. Or with ice cream again the glaze drizzled over.
They can also be served as a started salad.
Strain off the glaze and whisk in 1 Tbsp lemon juice and 3 tbsp olive oil and toss with mixed greens and serve the pears over
