Blue Cheese Stuffed Pears

- 10 inch cast iron skillet Or any oven-safe dish
Ingredients
- 3 Pears
- 3 oz Blue cheese gorgonzola or stilton
- 1/4 cup Dried Cranberries
- 1/4 cup Walnuts
- 3/4 cup Apple Cider divided Or white wine or red wine
- 3 tbsp Fig Jam Any jam, blackberry, raspberry, mango chutney
- 3 tbsp Maple Syrup
- 1/4 tsp Kosher salt
- 1/8 tsp Freshly ground pepper
Instructions
- Turn oven to 400 degrees and place your cast iron skillet into heat up with the oven.
- Mix all the blue cheese, walnuts, dried cranberries, maple syrup, jam, salt and pepper, and 1/4 cup of the apple cider.
- Stuff the pears evenly on the pears and pour the remaining 1/2 cup of apple cider around them.
- Bake 25 to 30 minutes.
- These are great as is drizzled with the glaze from the bottom of the pan. Or with ice cream again the glaze drizzled over.
- They can also be served as a started salad.
- Strain off the glaze and whisk in 1 Tbsp lemon juice and 3 tbsp olive oil and toss with mixed greens and serve the pears over
