Grilled Peach Salsa
Ingredients
- 3-4 Fresh peaches cut in half, and pits removed
- 3 Tomatoes, cut in half
- 1 inch Red onion round
- 1 Jalapeno cut in half You can omit this or only use a half
- 2 whole cloves garlic
- 2-3 Tbsp Cilantro
- 1 Lime, juiced, and zested
- 1/2 tsp kosher salt
- 1/2 tsp Freshy ground pepper I like either white or mixed pepper for this
Instructions
- Heat grill to 400°
- Spray peaches, tomatoes, onion, garlic, and jalapeno with avocado oil on all sides
- When your grill is hot, brush the grates with avocado oil and grill all the vegetables for 3 minutes on each side
- Watch the garlic it might not need this long and also the onion and jalapeno might need an extra minute.
- Peel the peaches and jalapenos and add to a food processor or blender along with the onion, garlic and tomatoes.
- Give a few quick pulses, then add the rest of the ingredients and pulse until desired consistency.
- Serve with chips or as a condiment for meat or fish.
