Grilled Peach Salsa

Grilled peach salsa is a delicious and unique twist on traditional salsa. It is made with ripe peaches that have been grilled to perfection, along with diced tomatoes, onions, cilantro, and a touch of lime juice. The smoky, sweet, and tangy flavors come together to create a refreshing and flavorful condiment that pairs well with grilled meats, tacos, or tortilla chips.

Ingredients
  

  • 3-4 Fresh peaches cut in half, and pits removed
  • 3 Tomatoes, cut in half
  • 1 inch Red onion round
  • 1 Jalapeno cut in half You can omit this or only use a half
  • 2 whole cloves garlic
  • 2-3 Tbsp Cilantro
  • 1 Lime, juiced, and zested
  • 1/2 tsp kosher salt
  • 1/2 tsp Freshy ground pepper I like either white or mixed pepper for this

Instructions
 

  • Heat grill to 400°
  • Spray peaches, tomatoes, onion, garlic, and jalapeno with avocado oil on all sides
  • When your grill is hot, brush the grates with avocado oil and grill all the vegetables for 3 minutes on each side
  • Watch the garlic it might not need this long and also the onion and jalapeno might need an extra minute.
  • Peel the peaches and jalapenos and add to a food processor or blender along with the onion, garlic and tomatoes.
  • Give a few quick pulses, then add the rest of the ingredients and pulse until desired consistency.
  • Serve with chips or as a condiment for meat or fish.
