Grilled Peach Salsa
Grilled peach salsa is a delicious and unique twist on traditional salsa. It is made with ripe peaches that have been grilled to perfection, along with diced tomatoes, onions, cilantro, and a touch of lime juice. The smoky, sweet, and tangy flavors come together to create a refreshing and flavorful condiment that pairs well with grilled meats, tacos, or tortilla chips.

- 3-4 Fresh peaches cut in half, and pits removed
- 3 Tomatoes, cut in half
- 1 inch Red onion round
- 1 Jalapeno cut in half You can omit this or only use a half
- 2 whole cloves garlic
- 2-3 Tbsp Cilantro
- 1 Lime, juiced, and zested
- 1/2 tsp kosher salt
- 1/2 tsp Freshy ground pepper I like either white or mixed pepper for this
Heat grill to 400°
Spray peaches, tomatoes, onion, garlic, and jalapeno with avocado oil on all sides
When your grill is hot, brush the grates with avocado oil and grill all the vegetables for 3 minutes on each side
Watch the garlic it might not need this long and also the onion and jalapeno might need an extra minute.
Peel the peaches and jalapenos and add to a food processor or blender along with the onion, garlic and tomatoes.
Give a few quick pulses, then add the rest of the ingredients and pulse until desired consistency.
Serve with chips or as a condiment for meat or fish.
