Caramelized Onion Vinaigrette

Pureed caramelized onions are the star of this creamy sweet vinaigrette; combined with the tanginess from the red wine vinegar and the sharp bite from the dijon mustard, it’s a must-have for your recipe collection. 

 

It can also be used as a marinade or for the base of your pasta salad.

 

The Onions take some time to cook, but most of that time is hands-off.

 

You can always double the onions and save the rest, and they freeze well.

Ingredients
  

Caramelized Onions

  • 2 cups sweet onions, cut in half and then into thin slices
  • 1 tbsp olive oil
  • 1 tbsp butter

Vinaigrette

  • 1/3 cup red wine vinegar
  • 1/3 cup olive oil if you fill your dressing needs more oil the add 1/3 cup vegetable oil
  • 1 tbsp honey
  • 1 tbsp dijon
  • 1 tsp thyme
  • salt and pepper

Instructions
 

Caramelize onions

  • In a 10 inch cast iron skillet add the butter and oil and place over medium heat
  • When the butter is melted and the pan is hot, add the onions and sprinkle with salt and stir well with tongs
  • lower your heat to low and let cook for 15 minutes
  • Stir well and you should start seeing the onions start to brown
  • continue to cook stirring every 10 minutes
  • My Stove cooks fast, so it takes about 35 minutes, some stoves can take 40 to 50 minutes. Be patient and let them cook until the desired brownness you wish
  • At the end, add 1 tablespoon of red wine vinegar to deglaze
  • Remove from pan and set aside

The Vinaigrette

  • Add the vinegar, dijon, honey, and thyme to the food processor and mix well.
  • add 2 to 3 turns from your 5 pepper blend and a generous pinch of salt, and mix again
  • Add the Onions and Mix again
  • Slowly add the olive oil thru the top of the processor with the motor running.
  • If you feel it is too thick, add Vegetable oil slowley thru the top of the processor with the motor running
  • Taste and add salt if needed

Notes

This is great as a pasta salad dressing as well as a Marinade
