lower your heat to low and let cook for 15 minutes
Stir well and you should start seeing the onions start to brown
continue to cook stirring every 10 minutes
My Stove cooks fast, so it takes about 35 minutes, some stoves can take 40 to 50 minutes. Be patient and let them cook until the desired brownness you wish
At the end, add 1 tablespoon of red wine vinegar to deglaze
Remove from pan and set aside
The Vinaigrette
Add the vinegar, dijon, honey, and thyme to the food processor and mix well.
add 2 to 3 turns from your 5 pepper blend and a generous pinch of salt, and mix again
Add the Onions and Mix again
Slowly add the olive oil thru the top of the processor with the motor running.
If you feel it is too thick, add Vegetable oil slowley thru the top of the processor with the motor running
Taste and add salt if needed
