Small Batch Apple Butter

Ingredients
- 1½ pounds apples
- 1/2 cup water
- 1/4 cup sugar
- 1/4 cup honey or brown sugar
- 1 tbsp apple cider vinegar or lemon juice
- 1/4-1/2 tsp cinnamon or apple or pumpkin pie spice
- pinch of kosher salt
- 1/2 tsp vanilla
Instructions
- Peel, core, and slice apples into one-inch pieces
- In a heavy bottom pot, add the apples, water, sugar, honey, vinegar, and 1/4 tsp cinnamon.
- Bring to a simmer, and simmer for 20 minutes until the apples are soft enough to purée.
- Using an emersion Blender, food processor, or blender, process until smooth.
- Add the salt, and vanilla, and process for another minute.
- Taste and add more cinnamon if desired.
- Return to a simmer and simmer until your desired thickness and consistency.
- Mine normally takes about another 20 minutes.
