Red Velvet Pancakes with Cream Cheese Glaze

Light, fluffy chocolaty pancakes topped with a smooth, creamy cream cheese glaze

I created this recipe to make a memorable valentine’s breakfast; I made them into heart shapes and decorated them with festive jimmies.

Red Velvet Pancakes with Cream Cheese Glaze

Ingredients
  

Cream Cheese Glaze

  • 4 oz cream cheese at room temperature
  • 1/4 cup powdered sugar
  • 2 Tbsp milk
  • 1 tsp vanilla

Red velvet pancakes

  • 2 cups flour
  • 1/4 cup natural cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 2 eggs
  • 1/2 cup brown sugar
  • cups buttermilk
  • tsp cider vinegar
  • ½ tsp vanilla
  • 2 Tbsp butter melted and cooled a bit
  • Tbsp red food color

Instructions
 

Glaze

  • Make the glaze first, so it's ready when you take your pancakes off the griddle
  • Sift powdered sugar into the cream cheese, add the vanilla, and whisk until smooth.
  • Add the milk and whisk until smooth; add more milk if needed to reach your desired consistency.
  • Set aside

Pancakes

  • Preheat an electric nonstick griddle to 350 degrees, or preheat your nonstick skillet or cast iron pan.
  • Sift together the first 5 ingredients in a large bowl, like to sift it to ensure the cocoa powder doesn't have lumps
  • In another bowl, whisk your two eggs, add brown sugar, and whisk until smooth.
  • Add the buttermilk and vinegar and whisk to combine.
  • Add the butter and food color and whisk to combine.
  • Combine the wet and dry ingredients, mixing until most lumps disappear. If the batter is too thick, add more milk. The batter should be just spreadable.
  • Drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry. Flip, and cook until browned on the other side. Repeat with the remaining batter. Drizzle with the cream cheese glaze to serve.
  • If making for valentines day, you can make them in heart-shaped cookie cutters.
