Preheat an electric nonstick griddle to 350 degrees, or preheat your nonstick skillet or cast iron pan.
Sift together the first 5 ingredients in a large bowl, like to sift it to ensure the cocoa powder doesn't have lumps
In another bowl, whisk your two eggs, add brown sugar, and whisk until smooth.
Add the buttermilk and vinegar and whisk to combine.
Add the butter and food color and whisk to combine.
Combine the wet and dry ingredients, mixing until most lumps disappear. If the batter is too thick, add more milk. The batter should be just spreadable.
Drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry. Flip, and cook until browned on the other side. Repeat with the remaining batter. Drizzle with the cream cheese glaze to serve.
If making for valentines day, you can make them in heart-shaped cookie cutters.
