Jamaican Jerk Seasoning

 

Jerk is a style of cooking native to Jamaica, where meat is rubbed with a wet or dry rub and grilled in a pit fire or old oil barrel halves over pimento wood which is native to Jamaica.

 

While this is not true Jerk it is a zesty, spicy,
seasoning blend that can liven up
Pasta, shrimp, fish, vegetables is great on popcorn and perfect for jambalaya

 

try it in Jamaican Jerk Shrimp with Pineapple Fried Rice

 

I have not added salt to the blend as I like to control how much and when the salt is added to a dish

 

Below you will find my version of what to add to this spice blend to create a wet rub, if using the wet rub to marinate chicken or pork, where I think its best, do plan ahead and marinate it overnight

 

Jamaican Jerk Spice blend

Ingredients
  

  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 2 tsp cayenne pepper
  • 2 tsp ground black pepper
  • 2 tsp dried thyme
  • 2 tsp brown sugar
  • 1 tsp allspice
  • 1 tsp dried parsly
  • 1 tsp chili flakes
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • 1/4 tsp cumin

Instructions
 

  • pour all ingredients in a jar and shake to mix well
  • or add all ingredients to a spice grinder and pulse a few times
  • store in a jar out of the light and heat

Jamaican Jerk Wet Rub

spicey marinade for chicken or pork

Equipment

  • food processor or blender

Ingredients
  

  • 4-6 green onions
  • 1-4 habanero let your own desire for heat determine how many
  • 3 cloves garlic
  • 1/4 cup brown sugar
  • 1/4 cup cider vinegar
  • juice from one lime
  • juice from one orange
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1 recipe Jamaican jerk spice blend

Instructions
 

  • in a food processor or a blender add all ingredients and pulse to combine and break, you want to mix it well and break up all the big chunks but not puree
  • rub on bone in skin on chicken or pork and let sit in the fridge overnight
