Homemade Lemon-Lime Soda
Ingredients
- 4 Limes
- 2 Lemons
- Sugar
Instructions
- Remove the zest from the lemons and limes, place them in a bowl, and toss with 1/4 cup pure cane sugar.
- Set aside for a minimum of 30 minutes up to overnight. The longer this sits the more citrus oils are removed from the zest, so the longer you can let this sit the better.
- Juice your lemons and limes, strain out the pulp, and measure the juice you get.
- You will need equal amounts of water, sugar and citrus juice.
- After your zest has sat add it and the oils from them to a pot. Add water to equal the amount of cirtus juice you have and then add sugar equal to the citrus juice minus the 1/4 you used for the zest. For example if you have one cup of citrus juice you will need one cup of water and 3/4 cup of sugar.
- Bring the water, zest and sugar to a bowl, turn off the heat and let it steep for 20 minutes.
- Strain into the citrus juice.
- Now you can use this syrup to make your homemade soda. Fill up a 16oz glass with ice, add 1/4 cup syrup and fill with club soda. Stir and enjoy. I like to add a squeeze a fresh lime wedge in mine.
