Ingredients
  

  • 1 cup Milk For dairy-free, use coconut milk.
  • 4 Dates roughly chopped Or 1/3 cup maple syrup, honey, sugar, or stevia.
  • 1/4 cup Cocoa Powder
  • 1 tbsp Corn starch I prefer a GMO-free one
  • 1/8 tsp Kosher salt
  • oz roughly chopped dark chocolate I use 85 percent, but this is up to you and how sweet you would like them. You can also use baker's chocolate and add more dates to sweeten them
  • 1/2 tsp Vanilla

Instructions
 

  • In a saucepan, whisk together the milk, dates or sugar, cornstarch, cocoa, and salt. Heat until hot and bubbly but not boiling.
  • I like to sift the cornstarch and cocoa to help it not get lumpy.
  • Add the chocolate and stir until melted. Continue cooking until the mixture thickens, about 1-2 minutes.
  • Off the heat, use an immersion blender to make sure all of the dates are a smooth consistency. This is only required if you are using dates.
  • Whisk in the vanilla
  • Transfer the mixture to the popsicle molds. It'll be thick like pudding but should still be pourable. Add sticks, then freeze until firm, at least 6 hours or overnight.
