Green Goddess Cucumber & Tomato Salad

Bright, herby, and as simple as it is stunning—this salad is summer in a bowl.

Why You’ll Love It

When cucumber crunch meets juicy tomato and creamy Green Goddess dressing, the result is a salad that’s as refreshing as it is flavorful. It’s perfect poolside, at backyard BBQs, or resting in your fridge for easy munching all week.

The Flavor Behind the Dressing

This salad gets its fresh, bold flavor from a Goat Goddess favorite: a homemade Green Goddess dressing (linked below). Packed with herbs, tangy notes, and a creamy base, this dressing ties everything together beautifully.

Ingredients

  • 3 cucumbers, cut into chunks
  • 2 medium tomatoes, cut into chunks
  • 1/2 sweet onion, thinly sliced
  • 1 tbsp fresh dill, minced
  • 1 cup green goddess dressing

Instructions

  • In a large bowl, combine cucumbers, tomatoes, onion, and dill.
Pour in ½ cup of the dressing, toss gently, then taste. Add the remaining dressing if needed.
Cover and refrigerate for 1–2 hours to let the flavors marry (optional, but delicious!).
Serve cold or at lightly chilled temp—perfect as a stand-alone dish or alongside grilled favorites.

Tips From the Galley

  • Feel free to customize: add avocado, swap dill for basil, or toss in some fresh parsley for a new twist.
Leftovers last 5–7 days in the fridge—just stir before serving; some juices may settle.
Pair with grilled chicken, shrimp, or fish to turn this salad into a full meal.
