So how do you make these delectable granola coated chicken strips? Well, it’s actually quite simple. All you need are a few basic ingredients, some chicken breast strips, and a crunchy granola of your choice

Ingredients
  

The Marinade is optional you can skip this and go straight to the breading process

  • 2 cups Buttermilk
  • 1 Tbsp Hot sauce
  • 1/2 tsp Kosher salt
  • 1/4 tsb freshly ground black pepper

Chicken strips

Instructions
 

If marinating

  • Whisk all of the marinating ingredients together.
  • Toss in the chicken strips and let marinate as long as you can. I like to go at least an hour but you can go overnight.

Chicken Strips

  • Turn your oven to 450° and line a sheet tray with parchment paper.
  • If marinading, drain your chicken, if you did not marinate salt and pepper your chicken.
  • Set up your breading station, you will need 3 vessels.
  • Add the flour and half the salt and pepper to one.
  • Add the eggs and salt and pepper to the second one.
  • Add the granola to the third.
  • Dip the cutlets one by one first into the flour (shake off excess) then into eggs (shake off excess) finally into the granola panko mixture.
  • Place on the sheet tray and bake in the oven for 10- to 15 minutes. It will depend on how thick you cut your chicken.
  • Serve warm with a dipping sauce. I like honey mustard.
