Ingredients
  

  • 1 cup almond flour
  • 8 oz sharp cheddar cheese, shredded
  • 1 tbsp butter

  • 1-2 tsp Sesame seeds (mix into dough or sprinkle on top)

Salt to taste (start with a small pinch if your cheese and seasonings aren’t salty—adjust based on your mix)

Instructions
 

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
    In a food processor, pulse almond flour, seasonings, and salt (if using) to combine.
    Add cheese and butter. Process until the dough forms moist clumps.
    Add sesame seeds (if mixing in), and pulse briefly.
    Roll dough out between two sheets of parchment to 1/8–1/4 inch thick.
    Cut into cracker shapes.
    Slide parchment with cut dough onto a sheet tray and refrigerate for about 10 minutes.
    Remove excess dough around the shapes. If topping with sesame seeds, sprinkle and press gently.
    Bake 12–15 minutes, or until edges are golden brown.
    Cool completely on a wire rack for best crunch.
