Baked Sweet Potato
creamy, soft sweet potato with a crispy outer layer
Ingredients
- 4 sweet potatoes
- 1 tsp Avocado oil
- kosher salt
Instructions
- heat oven to 350 degrees
- wash potatoes well, using a vegetable brush if you have one
- generously rub potatoes with the oil
- place in a cast-iron skillet or heavy sheet pan and liberally sprinkle with salt
- place in oven and cook for 45 minutes, check and bake 15 minutes more if needed
