One Seasoning Blend With Plenty of Possibilities

Italian sausage is not limited to something you have to buy already mixed at the grocery store. With the right balance of fennel, herbs, garlic, onion, and pepper, you can create that familiar Italian sausage flavor using ingredients already in your pantry.

This blend works with ground pork, beef, chicken, or turkey. It can also bring the flavor of Italian sausage to tomato sauce, soup, beans, vegetables, rice, and casseroles without adding any meat at all.

What Makes It Taste Like Italian Sausage?

Fennel is the ingredient that sets Italian sausage seasoning apart from an ordinary Italian herb blend. Its slightly sweet, aromatic flavor is what makes the seasoning immediately recognizable.

Oregano, basil, and thyme provide the herbal notes, while garlic and onion powder build savory flavor. Sweet paprika adds warmth and color without making the blend smoky. Black pepper and crushed red pepper add a gentle heat that can easily be adjusted.

 

How to Season Ground Meat

One full batch of this seasoning is enough for one pound of ground pork, beef, chicken, or turkey.

Mix the seasoning thoroughly into the ground meat, then cover and refrigerate it for at least 30 minutes before cooking. This gives the dried herbs time to soften and allows the flavors to spread throughout the meat.

The seasoned meat can be browned and crumbled, shaped into patties or meatballs, stuffed into vegetables, or used in pasta dishes, casseroles, soups, and sauces.

When using very lean ground meat, mix in one tablespoon of extra-virgin olive oil. The oil adds moisture and helps distribute the seasoning evenly.

Italian Sausage Flavor Without the Meat

You do not need to make sausage to use this blend. It can add the same savory, fennel-forward flavor to meatless dishes.

Begin with one teaspoon in tomato sauce, soup, beans, lentils, rice, roasted vegetables, or a casserole. Allow it to cook for a few minutes, taste, and add more if needed.

Because the seasoning already contains salt, wait until after adding the blend before deciding whether the dish needs any additional salt.

Why Crush the Fennel Seeds?

Whole fennel seeds can create strong, uneven bursts of flavor. Lightly crushing them releases their aromatic oils and helps the fennel distribute more evenly throughout the seasoning.

Pulse the fennel seeds briefly in a spice grinder before adding the remaining ingredients. The goal is to crack the seeds while leaving some visible texture—not grind them into a fine powder.

If you do not have a spice grinder, lightly crush the fennel seeds with a mortar and pestle, then stir them together with the remaining seasonings.

Make It Mild or Spicy

The recipe uses ¼ teaspoon of crushed red pepper flakes, which provides gentle warmth without making the seasoning particularly hot.

For spicy Italian sausage, increase the crushed red pepper flakes to ½ teaspoon. You can also leave them out completely if you want an especially mild blend.

    Add the remaining seasonings and pulse once or twice, just until evenly combined.
    To make Italian sausage, mix the entire batch thoroughly into 1 pound of ground pork, beef, chicken, or turkey. Cover and refrigerate for at least 30 minutes before cooking to give the seasonings time to flavor the meat.
    To season soups, sauces, beans, vegetables, or casseroles, add the blend a little at a time according to taste. Begin with 1 teaspoon and add more as needed.
