Ingredients
  

  • 1 tbsp Butter
  • 1 tbsp Extra virgin olive oil
  • 1 Onion, diced
  • 3 cloves Galic, minced
  • tbso Tomato paste
  • 2 tsp Itailian seasoning
  • 1 tsp Kosher salt
  • 1/2 tsp Freshly ground pepper I prefure a mixed pepper blend
  • 6 cups Chicken stock
  • 1 cup Heavy cream
  • 8 oz Block cream cheese
  • 1 cup Freshley graded parmesian cheese.
  • 2-3 cups leftover chicken Or 1 pound chicken breast or thighs, diced into 1 inch pieces.
  • 1 Cup Oven dried tomatoes Or sun-dried tomatoes
  • 8 oz Pasta made with unbleached flour Ditalini, elbow, penne
  • 1 pound Fresh spinach, despemed and washed Frozed spinach will also work

below are sun-dried tomatoes that do not contain any bad ingrediens

Instructions
 

  • In a soup pot over medium high heat, add the butter and oil.
  • Add the onion and cook for about 3 munutes until softened and translucent.
  • Add the garlic, tomato paste and seasonings, and cook for one minute.
  • Add the stock, cream and parmesian and cook stiring until te cream cheese in melted in.
  • Add in the chicken and tomatoes, and bring to a boil.
  • Add in the pasta and cook stirring often for 12 minutes.
  • Add in the spinach and cook for two more minuts.
  • Garnishes to serve with are fresh basil, parmesian cheese, red pepper flackes or balsamic viniger.
