Quick Strawberry Jam

I love to preserve strawberry season any way I can, and strawberry jam is one, and it’s quick and easy. It only needs lemons, strawberries, and sugar.

And no pectin is needed as the lemon and sugar work together with the natural pectin already found in strawberries and lemons.

If it lasts that long, you can store it in your refrigerator for up to a month or in your freezer for up to one year.

Quick Strawberry Jam

Homemade strawberry jam with only three ingredients

Equipment

  • 1 heavy bottom pot

Ingredients
  

  • 16 oz fresh strawberries, washed and cut into quarters
  • 1 lemon, zested, and juiced
  • 3/4 cup sugar
  • 1 pinch kosher salt

Instructions
 

  • In a heavy-bottom saucepan, mix strawberries, sugar, and lemon juice.
  • Stir over med-low heat until the sugar is dissolved.
  • Increase heat to med-high and bring mixture to a full rolling boil.
  • Reduce heat to medium, stirring frequently, mashing the strawberries as you stir. Continue to simmer until the jam is thickened and bubbles completely cover the surface of the jam. (about 10 minutes.)
  • Transfer the jam to a jar and let it cool to room temperature.
    Seal jars and store them in the refrigerator.
