Teriyaki-Style Ground Beef & Pineapple Stir-Fry
Most teriyaki beef recipes use sliced steak, but this one takes a faster, budget-friendly route with ground beef — still tender, still flavorful, and ready in about 30 minutes. Sweet pineapple pairs perfectly with savory beef and crisp vegetables, all coated in a glossy homemade teriyaki sauce.

For the Teriyaki Sauce:
- 1 cup pineapple juice (fresh, canned, or the leftover from home-canned pineapple)
- 1/4 cup tamari or soy sauce
- 1/4 cup brown sugar (or honey/maple syrup)
- 1 tbsp grated fresh ginger (or 2 tsp ground ginger)
- 1 medium garlic clove, minced
- 1 tbsp cornstarch*
For the Stir-Fry:
- 1 pound ground beef
- 1/2 red onion, sliced
- 1 red bell pepper, sliced
- 2 cups broccoli florets
- 1 cup pineapple chunks (home-canned preferred; avoid citric acid if store-bought)
- 1 tsp avocado oil
- Cooked jasmine or basmati rice, for serving
Make the Sauce — In a jar with a lid, combine pineapple juice, tamari, brown sugar, ginger, garlic, and cornstarch. Shake or whisk until smooth.Cook the Onion & Beef —Option 1 (Sweeter, Softer Onion): Heat oil in a large skillet over medium heat. Add onion and cook for 2 minutes before adding ground beef. Cook until the beef is browned, breaking it apart as it cooks. Drain excess fat if needed.Option 2 (Quicker, Savory Onion): Heat oil in a large skillet over medium heat. Add ground beef and onion together, cooking until the beef is browned and the onion is softened. Drain excess fat if needed.Add Remaining Veggies — Stir in bell pepper and broccoli. Cook for 3–4 minutes until just tender but still crisp.Sauce It Up — Give the sauce a quick shake and pour over the beef and vegetables. Stir well and simmer 2–3 minutes until thickened.Add Pineapple — Stir in pineapple chunks and cook for about 1 minute until heated through.Serve — Spoon over hot rice and garnish with green onions or sesame seeds if desired.
Tips & Notes:
Cornstarch Amount: 1 tablespoon will create a light, glossy coating that clings nicely without feeling heavy. For a thicker, more glaze-like sauce, increase to 1 ½ tablespoons.Add crushed red pepper flakes or sliced chili for heat.Works well with chicken, turkey.Fresh pineapple is great — just be sure to include juice for the sauce.
