Ingredients
  

Swim Biscuits

  • 2 1/2 cups AP flour
  • 1 tbsp Baking powder
  • 1 tsp Kosher salt
  • 2 tbsp Brown sugar
  • 1 tsp Cinnamon
  • 1 tsp Vanilla
  • 2 cups Buttermilk
  • 1 Stick os butter melted

Glaze

  • 1/2 cup Powdered sugar
  • 2-3 tbsp Milk

Instructions
 

  • Preheat your oven to 450°F
  • Whisk togeather the sugar and 1 tbsp cinnamon and set aside
  • Melt the butter in a 10-inch cast iron skillet make sure not to get your skillet to hot.
  • In a large mixing bowl, whisk together the flour, baking powder, kosher salt, the one tsp cinnamon and brown sugar until well combined.
  • In a separate bowl, mix the buttermilk with the vanilla extract.
  • In a small bowl, whisk together the cane sugar and ground cinnamon until evenly mixed.
  • Pour the buttermilk mixture into the flour mixture. Stir gently until just combined—be careful not to overmix. The batter will be wet and tacky.
  • Pour the batter into the prepared skillet, spreading it out evenly. Sprinkle half of the cinnamon sugar mixture over the top and gently swirl it into the batter. Then, sprinkle the remaining cinnamon sugar over the surface.
  • It is ok for the butter to rise up over the batter.
  • Useing a sharp knife cut the batter into 8 triangles
  • Bake in the preheated oven for 20 to 25 minutes, or until the biscuits are golden brown and cooked through.
  • Once baked, let the biscuits cool in the skillet for about 10 minutes. Meanwhile, you can prepare the optional glaze by whisking together the powdered sugar and milk (or heavy cream) until smooth. Drizzle the glaze over the warm biscuits before serving.
