These salted espresso brownie cookies combine the crackled top and rich chocolate flavor of a brownie with the shape and structure of a cookie. Espresso powder deepens the chocolate flavor, while optional flaky sea salt balances the sweetness.

Heat the oven to 350°F. Line a sheet pan with parchment paper.Add approximately 1 inch of water to a small saucepan and bring it to a gentle simmer. Place the chopped chocolate and butter in a heatproof bowl that fits securely over the saucepan. Make sure the bottom of the bowl does not touch the water.Heat the chocolate and butter over the simmering water, stirring occasionally, until nearly melted. Remove the bowl from the saucepan and continue stirring until completely melted and smooth.Stir the espresso powder into the warm chocolate mixture. Set it aside for approximately 5 minutes. The mixture should remain warm and fluid but should not be hot when it is added to the eggs.Place the eggs, cane sugar, and brown sugar in a large mixing bowl. Whisk vigorously for 2–3 minutes, until the mixture is noticeably lighter in color, thickened, and slightly foamy. Whisk in the vanilla.While whisking continuously, slowly pour the warm chocolate mixture into the egg mixture. Continue whisking until evenly combined and smooth.Sift the flour, cocoa powder, and baking powder together into a separate bowl. Whisk in the kosher salt.Add the dry ingredients to the chocolate mixture. Using a flexible spatula, fold gently just until no dry flour or cocoa remains. Do not overmix.Let the dough stand at room temperature for approximately 10 minutes, or until it thickens into a very soft but scoopable dough.Using a 2-tablespoon cookie scoop, portion the dough onto the prepared sheet pan, placing the cookies approximately 2 inches apart.Bake for 9–11 minutes. The tops should appear shiny and crackled, the edges should be set, and the centers should still look slightly soft.Immediately after removing the cookies from the oven, sprinkle them lightly with flaky sea salt.Allow the cookies to cool on the sheet pan for 5–10 minutes before transferring them to a cooling rack.
