Jamaican Jerk Spiced Shrimp with Pineapple Fried Rice

shrimp marinade
- 1 pound shrimp pealed and deveined
- 1 lime juices
- 1 orange juiced
- 1 tbsp jamaican jerk seasoning Jamaican Jerk Seasoning
- 1 tsp sriracha or chili sauce
- 1 tbsp soy sauce
- 1 tsp honey
- 1/2 tsp sea salt
stir fry
- 3 eggs beaten with a pinch of salt
- 4 cups cooked rice long grain or jasmin
- 1 onion diced
- 1 red bell pepper diced
- 5 cloves garlic minced
- 1 cup cashews whole lightly salted
- 1 can peas drained
- 2-3 green onions diced
- 1/3 cup cilantro chopped
- 2 cups pineapple fresh cut into bit size pieces
- sea salt and white pepper to taste
sauce
- 2 tbsp soy sauce
- 1 tbsp jamican jerk seasoning
- 1 tsp sriracha or red chili sauce
in a bowl whisk all the marinade ingredients together and add the shrimplet marinate while you prep your stir fry ingredients when you have all your ingredients together, heat your pan on medium-high heat, and when hot , add 1 tbsp oil
pour in the beaten eggs and cook stirring frequently until the eggs are soft scrambles
remove eggs to a platter
add shrimp to the pan and cook about 2 minutes on each side and remove to the platter with the eggs
add 1 tbsp oil to the pan and add onions and red peppers to the pan and cook stirring frequently 4-5 minutes
stir in garlic and cook 1 minute
stir in pineapple and cook 2 minutes
add rice and green onions and cook 2-3 minutetsuntil rice is hot and popping
add the sauce and stir well
remove from the heat and toss in cilantro
