Ingredients

  • The zest from 4 limes
  • 1 guajillo chili
  • 1 pasilla pepper
  • 1 ancho chili
  • 1 new Mexican chili
  • 1 tsp sea salt

if using chili powder instead of dried chilies

  • 3 tbsp Chill powder fill free to mix chili powders

Instructions

  • Heat oven too 250°
  • Place zest on a piece of parchment paper on a sheet tray and place in the oven. Set timer for 20 minutes
  • Remove the seeds from the chili peppers and cut them into small pieces.
I find scissors work best for this.
  • Add the cut pieces of the chili peppers to the lime zest when the timer goes off, and place back into the oven for 5 to 10 minutes.
  • Add all to the spice grinder and add the salt and pulse the mixture until it’s finely blended.
  • You can customize this by adding paprika or your favorite chili powder.
  • Once all the ingredients are well combined, transfer the seasoning to an airtight jar or container. You can store it in a cool, dark place for up to 2-3 months. However, we recommend making smaller batches to ensure the seasoning stays as fresh as possible.
