Homemade Strawberry Extract

Making your own extracts allows you to control the ingredients, ensuring there are no artificial flavors or preservatives. Plus, the flavor of homemade extracts is often more vibrant than store-bought options. Strawberry extract can enhance your favorite desserts, elevate your morning yogurt, or even add a delicious touch to homemade ice creams.

What You’ll Need:

  • 2 cups fresh strawberriesChoose ripe, sweet berries for the best flavor and aroma.
  • 1 cup vodka (90 proof or higher)Vodka is neutral and won’t interfere with the strawberry flavor. You can also use rum or brandy for a twist.

Instructions
 

  • Wash and Prep the Strawberries
    Rinse the berries thoroughly in cold water. Remove the green tops (hull them), and slice into quarters to expose more surface area for extraction.
  • Fill Your Jar
    Place the sliced strawberries into a clean glass jar, then pour in the vodka. Make sure the berries are fully submerged. Leave about ½ inch of space at the top.
  • Seal and Shake
    Tightly seal the jar with a lid and shake gently to mix. This helps kickstart the infusion process.
  • Let It Steep
    Store the jar in a cool, dark place—like a pantry or cupboard. Let it infuse for at least 4 to 6 weeks, giving the jar a gentle shake every few days. For deeper flavor, you can let it steep for up to 3 months.
  • Strain and Bottle
    Once the extract has reached your desired strength, strain it through a fine mesh strainer or cheesecloth into a clean container. Press the strawberries to get every last drop of flavor.
  • Store It Properly
    Use a funnel to pour the finished extract into small, dark glass bottles. These protect the flavor from light exposure. Store in a cool, dark place for best results. Your homemade extract will keep for 1 to 2 years.
