Gingerbread Mashed Sweet Potatoes

Creamy gingerbread spiced mashed sweet potatoes make a delicious holiday-time side dish.

Ingredients
  

  • 2 Medium sweet potatoes
  • Avocado oil
  • tsp Kosher salt divided
  • 2 Tbsp Butter
  • 2 Tbsp Maple syrup or brown sugar
  • 2 to 3 tsp Gingerbread Spice Mix

Instructions
 

  • Set oven to 400°
  • Wash sweet potatoes and brush with the avocado oil and sprinkle with 1 tsp of the salt.
  • Roast for 45 minutes to an hour until a knife can easily be inserted.
  • Or you can Bring a large pot of salted water to a boil. Add sweet potatoes, reduce the heat to medium-low, and simmer until tender, 20 to 30 minutes. Drain and transfer to a bowl.
  • While the sweet potatoes are cooking, add the remaining ingredients to a bowl.
  • Allow the roasted potatoes to rest for about 5 minutes, and then carefully remove the skins by holding them with tongs and using a knife, and add them to your bowl.
  • Use a potato masher to mash and combine your potatoes.
  • Taste and add more salt or gingerbread spice if needed.
