in a bowl add pepper, jerk seasoning, and garlic
add the soy sauce, sriracha and dijon
whisk in oil until well combined
place pork chops in a gallon bag and add marinade, using your hands, massage the marinade into the chops from the outside of the bag
let the chops marinate at room temperature for one hour
heat a cast iron or heavy pan over medium-high heat, add the pork chops and marinade to the pan and cook for 5 minutes, flip and cook for another 5 minutes
check for an internal temperature of 145 degreescook, checking every 3 minutes until desired internal temperature med-rare 145-15
medium 150-155
while pork chops are cooking, cut apple and mix the apple ingredients
remove the pork chops to a plate and deglaze the pan with 1/3 cup of water
apple juice or apple cider is also good if you have it on hand
add the butter, apples, and seasoning and cook stirring for 3 to 5 minutes
i like my apples a little firm so 3 minutes works for me
if you like your apple softer then 5 minutes should do it
serve the pork chops topped with the apples
