- 6 Hard-boiled eggs
- 2-3 tbsp Mayonaise
- 1 tsp Yellow mustard or Dijon
- 1 tsp Apple cider vinegar
- 1 tbsp Sweet relish
- Kosher salt and pepper to taste
- Paprika or chives for garnish

Peel the hard-boiled eggs and slice them in half lengthwise.
Remove the yolks and place them in a mixing bowl. Set the egg whites aside.
Mash the yolks with a fork, then add mayonnaise,starting with 2 tbsp and adding more if needed, mustard, vinegar, relish, salt, and pepper. Mix until smooth and creamy.
Sprinkle the egg whites with salt and pepper.
Spoon or pipe the yolk mixture back into the egg white halves.
Sprinkle with paprika and garnish with fresh herbs before serving.
