  • 2 cups Fresh Blueberries
  • 1/4 cup Maple syrup
  • 1/2 Lemon
  • 1/3 cup Water
  • 1/2 tsp Corn starch
  • 1 tsp Vanilla
  • Pinch of cinnamon optional

Instructions
 

  • In a medium saucepan over medium heat, combine the blueberries, maple syrup, and lemon zest. Cook for about 3 minutes, gently smashing the blueberries with a wooden spoon as they begin to soften and release their juices.
  • In a separate bowl, whisk together the water, lemon juice, and corn starch until well combined.
  • When the blueberry mixture reaches a light boil, gradually whisk in the slurry, cook for an additional 2 to 3 minutes, stirring constantly, until the sauce thickens.
  • Remove the sauce from heat and stir in the vanilla extract and a pinch of cinnamon if desired.
  • Let the sauce cool slightly before using; it will continue to thicken as it cools.
