- 2 cups Fresh Blueberries
- 1/4 cup Maple syrup
- 1/2 Lemon
- 1/3 cup Water
- 1/2 tsp Corn starch
- 1 tsp Vanilla
- Pinch of cinnamon optional
Blueberry Maple Sauce makes a great topping
In a medium saucepan over medium heat, combine the blueberries, maple syrup, and lemon zest. Cook for about 3 minutes, gently smashing the blueberries with a wooden spoon as they begin to soften and release their juices.
In a separate bowl, whisk together the water, lemon juice, and corn starch until well combined.
When the blueberry mixture reaches a light boil, gradually whisk in the slurry, cook for an additional 2 to 3 minutes, stirring constantly, until the sauce thickens.
Remove the sauce from heat and stir in the vanilla extract and a pinch of cinnamon if desired.
Let the sauce cool slightly before using; it will continue to thicken as it cools.
