Bacon Wrapped Mini sweet peppers
A combination of sweet and slightly tangy flavors of peppers with the savory, smokey taste of bacon.

- 12 Sweet mini peppers
- 4 oz Softened cream cheese
- 1 cup Shredded cheese, cheddar, pepper jack, parmesan whatever cheese you like. You can also use feta, goat, blue, or brie cheese.
- 1/2 tsp Hot sauce,
- 2 tsp Homemade ranch seasoning blend,
- 1/2 tsp Kosher salt,
- 1/4 tsp Freshly ground pepper,
- 12 Slices thin-cut bacon cut in half.
Preheat oven to 400°F.
Cut the top of each pepper and then cut the peppers in half, top to bottom, and remove the seeds and ribs.
Finally, dice the pepper part of the tops of the peppers.
Mix cream cheese, shredded cheese, ranch seasoning, pepper tops, salt and pepper, and hot sauce until thoroughly combined. Spoon the mixture into a large resealable plastic bag; trim the corner of the bag wide enough for the filling to squeeze through easily.
Squeeze filling evenly into peppers. Wrap a slice of bacon around the center of each pepper. Arrange peppers on a rack that is placed over a sheet tray. Line the tray with foil for easy cleanup. Bake for 20-25 minutes or until the peppers soften, and filling begins to brown slightly, and the bacon becomes crisp.
Serve with ranch, avocado ranch, B.B.Q sauce, or your favorite dipping sauce.
